Grilled Salmon

Ingredients

1 lb. salmon fillets

2 tsp each vegetable oil, lemon juice, and soy sauce

1 tbsp each brown sugar and minced fresh gingerrrot

1 clove garlic, minced

pinch each pepper and cayenne pepper

Directions

Make several shallow diagonal slashes in skinless side of salmon. Place fish, skin side up, in shallow glass dish. Whisk together oil, lemon juice, soy sauce, sugar, ginger, garlic, pepper and cayenne; pour over salmon and let stand for 30 minutes. Remove salmon from marinade; discard marinade.

Place fillet, skin side down, on greased grill directly over low heat; cook covered, for 30 minutes or until fish flakes when tested with fork.
